It’s not that I don’t love my classic Peanut Butter Cookies – I do, I do – but I’m a tinkerer and tinkers gotta do what tinkers do and so I played with that classic and came up with a cookie that I love just as much: the Change-Up. It’s not a criss-cross cookie, but a scooper that doesn’t get pressed. It bakes to a chewy center and a shortbread edge and it’s pretty terrific.
