Trying to pretend we’re still in Paris. Black truffle grilled cheese sandwiches in process. It’s rare that I have a truffle and I’m always a little nervous – I want to do just enough to it to bring out its flavor and aromas. Nothing more . Made the sandwiches with my husband Michael’s homemade brioche (spread with butter), slices of aged Comté and black truffles. The sandwiches get wrapped and refrigerated for a day and then they’re brushed with clarified butter and cooked, pressed down, on a griddle.
