This is the galette des rois that I created for my @nytmag column “On Dessert”. It’s beautiful, but simple: 2 rounds of puff pastry encasing a quick-to-make almond filling. The galette celebrates Epiphany, when the Three Kings visited the infant Jesus, and it’s enjoyed all through the month of January in France. (Since I’m in Paris, I’ll be eating lots of these!) Each galette holds a surprise- a little trinket or bean – get the prize and you get to be a king or queen for the day, crown included.
