Remember the picture of Michael’s bread proofing? (Picture 3 here when you swipe.) Well, here’s his bread just out of the oven. He made a dozen loaves (they’re levain baguettes). They were baked on metal plates in a convection oven (picture number 2). Oh, and the two we ate last night were delicious. The other loaves are double-wrapped and in the freezer.
