It’s the moment for plums in Paris! Italian prune (called quetsch in French), green (reine claude), red and my favorite, mirabelles, yellow, sweeet and the size of cherries. I mixed them all up with a little sugar, but them on a round of store-bought all-butter puff pastry, dotted the fruit with butter and some crushed amaretti. The juice from the fruit bubbled through the crust – it always does – but I think it will be just fine.
