Honey-Mustard Pork – a lightning-quick dinner

When I sent this recipe off to Mary Dodd, my recipe tester, it came back with a change of name.  Mary dubbed it Lightning Quick Honey-Mustard Pork.  And while Mary’s faster in the kitchen that I am, even slow-poke moi can go from zero to table in 20 minutes.  My guess is that most cooks can best me here.

The dish is based on pork tenderloin – a naturally quick-cooker – and gets all its flavor from a mix of spices and a wonderful glaze.  The spices are chili powder, ginger, cumin and curry powder, and the glaze is honey, apple-cider vinegar and sharp, bright Dijon mustard.  

A quick word of advice: have everything measured out and ready to go because once you start cooking, it’ll be only minutes before the dish is done and ready to be served.  You can serve it with a grain, of course, but I like it with a green salad.
