Here’s tonight’s dessert. The yellow éclair is Mangue Banane, mango and banana. I haven’t cut it open yet, but the éclair decoder says it will be: Milk Chocolate-Caramel Crémeux, mango-banana coulis and mango fondant decorated wtih a sugar flower and little pebbles of almond paste. In the center, Fraise Poivron, strawberry and red (bell) pepper: strawberry and confited pepper crémeux, strawberry glaze and small rings of white chocolate. And then there’s our well-dressed nun.
Next time? I might go savory. The éclair with salmon tartar and yuzu cream sounds pretty swell.
