And for a ta-dah finish: Chocolate Cream Puffs with Mascarpone and Rose Filling.  Cream puffs are a centuries-old recipe, but they’re enjoying a new wave of popularity in Paris these days, where shops and kiosks that sell only cream puffs are now as prevalent as cupcake stands are in the States.  Cream puffs are hands-down delicious, and making them is magical and, as far as I’m concerned, the main reason oven manufacturers put windows on the doors.  These are very unusual because they’re chocolate and very special because of their elegant filling.
