When you see the word pâte on a menu, which is directly translated as paste, you should take it to mean pasta. However — and this can be a little confusing — several kinds of dough are also considered pastes, so you’ll see the word in pâte brisée (tart dough), pâte sucrée and pâte sablée (sweet tart doughs), pâte feuilletage (puff pastry) and pâte à choux (cream puff dough).
