Remember those just made gougères that I posted a couple of days ago? The ones I was putting in the freezer? Here they are baked. I made them as a before-dinner nibble last night.

For those of you who asked, here’s the drill: Make the dough (I’ve got recipes in #aroundmyfrenchtable and my @shortstackeds book #Butter). As soon as it’s made, portion it out in a parchment-lined baking sheet or cutting board. I use an @oxo small cookie scoop for the job. You can place them close together. Freeze. When the puffs are solid, pack them airtight. They’ll be fine in the freezer for up to 2 months. When you’re ready to bake, preheat the oven to 425F. Place as many gougères as you want on a lined baking sheet. Slide the sheet into the oven, immediately lower the temp to 375F and bake for 20 to 30 minutes, or until firm and golden. Serve them Immediately – they’re fine at room temp, but best straight out of the oven.
