Lunch in Paris. I love when a dish – in this case a tuna steak that is crisp on both sides and pretty much uncooked in between – has as much vegetables as it does fish (or meat). So much flavor, texture and color. The vegetables (and the popped buckwheat) change everything – as do the pickled onions and strips of lemon zest: three cheers for acidity, the great picker-upper.
