Toasting nuts

Toasting enhances the flavor of just about any nut. If you’ve got a very small quantity, you can toast them in a dry skillet over medium heat. For larger amounts, spread the nuts out on a baking sheet lined with a silicone baking mat or parchment paper and toast them in a 350-degree-F oven for about 10 minutes, stirring a couple of times and keeping a nose out for their aroma: if you catch the whiff of the nuts, it’s a sign that they’re browned or almost browned and that you should be vigilant about watching them.
