Storing chocolate

No matter what kind of chocolate you have, you should store it in a cool, dry place away from light. Don’t keep chocolate in the refrigerator — it’s too humid. And don’t worry if your chocolate develops what’s called “bloom,” a gray or white discoloration — it comes from heat and will disappear when the chocolate is melted. Dark chocolates can be kept for a couple of years, while white and milk chocolates are more fragile and should be used within a year.
