Sifting, Sifters, and Strainers

Being a lazy cook, I try not to sift ingredients unless absolutely necessary (as it is with fine textured cornstarch, confectioners’ sugar, and cocoa) and when I do sift, I’m more likely to use a strainer than an old-fashioned sifter. I like the open area of a strainer and the fact that it’s easy to clean.
